Winter Vitamins

As we are facing the cold winter months, it is time to give our bodies some extra vitamins - but not chemically - no, we have something much better in natural form, namely Rose Hip. Rose Hip are vitamin bombs - whether we cook them or use them raw. Rose Hip is nothing else than the fruits of the Dog Rose - a wild Rose. After flowering, a orange/red fruit is formed from the bottom of the flowers, which is apparently the fruit. An apparent fruit, because there are many small nuts under the skin of the original fruit. Rose Hip is not only very pretty to look at, but also very healthy, as they have an extremely high amount of Vitamin C. Nature has planned ahead, so that also during the cold months, we can obtain the necessary vitamins. I prefer the Rose Hip as they are slightly bigger, but the others are also suitable. One can find them at the edges of forests, on the side of streams and brooks and as a green fence. Rose Hip Confiture (A confection, preserve, or jam) This is done quickly and easily; 1,5 kg Rose Hip (wash and cut in rough pieces) mix with 750 g grated apple, 2 dl water, 1 dl red wine, and 1,2 kg sugar and cook for 30 minutes. Press through sieve and fill into glasses. A Rose Hip Tart to fall in love with :-) Pastry: 180 g flour, pinch of salt, 50 g sugar, 100 g butter, 2- 3 tbsp water. 1. mix flour and sugar, add small pieces of butter and mix well 2. add water and make dough 3. rest the dough for 30 minutes 4. roll out and fill bottom of baking tin Filling: 150 g powder sugar, 5 eggs, 6 tbsp Rose Hip Confiture Mix ingredients for the filling and spread over the pastry. Bake in pre-heated oven (160°C) - 40 minutes Serve with whipped cream Buon Appetito |

Thank you for sharing this interesting information about the Dog Rose, Rita. I looked it up and it is supposed to grow wild here in Massachusetts. I'll have to research it further. Keep up the good work. Best wishes. Frederick
Hi Rita, I remember my mother giving us kids "Rose Hip Syrup" every day during the Winter. Sometimes it would be bought from the shops, but my grandmother also made jam out of them, which I much prefered. The Dog Rose used to grow in abundance along the hedgerows near where my grandparents lived in Sussex (UK). During the Autumn we would spend our Sunday afternoons walking along the lanes picking rose hips and other wild fruits that grew alongside them. My grandfather also used to make "rose hip wine".
